January 6th is the Epiphany holiday for Catholics, officially the last day of Christmas, and if you’re from a more festive part of the world, the first day of Carnivale. But it’s also Christmas Day for the Orthodox. Diplo-husband’s parents are arriving today, and we’ll be celebrating, as per their tradition with a fish dinner. As usual, I’m turning to Ina Garten with a go-to recipe – but I promise I’ll diversify for some parties going forward since I realize I’m becoming a one-trick pony in singing her praises. But the truth is, the books are good, the recipes are delicious, and most dishes don’t require 456 ingredients that I can’t find, all of which are important when most of the day seems to be eaten up by diplo-baby (not that I would have it any other way).
